How should I store my caviar?

Keep your caviar refrigerated between 28°F and 32°F (–2°C to 0°C). The coldest part of your refrigerator — typically the back of the bottom shelf — is ideal. Do not freeze caviar, as this damages the eggs and alters the texture.

How long does caviar keep once it arrives?

An unopened tin will keep for up to 4 weeks from delivery when stored correctly. Once opened, consume within 2–3 days. For best flavor, enjoy the tin in a single sitting.

Can I freeze caviar?

No. Freezing ruptures the delicate egg membrane, turning the caviar mushy and dull in flavor. Always refrigerate.

My tin arrived with a slight bulge or the seal looks different. Is it safe?

Contact us at [email protected] before opening the tin. We will assess the situation and arrange a replacement if needed. Do not consume caviar from a compromised tin.

What utensils should I use?

Use non-metallic utensils — mother-of-pearl, bone, horn, or high-quality plastic. Metal spoons react with caviar and introduce a metallic taste. Most tins arrive with a mother-of-pearl spoon included.

What temperature should caviar be served at?

Serve caviar cold, between 34°F and 39°F (1°C to 4°C). Remove the tin from the refrigerator no more than 10–15 minutes before serving. Present on a bed of crushed ice to keep it at the right temperature throughout the meal.

How much caviar should I serve per person?

As a standalone tasting: 30g per person. As a starter or paired course: 50g serves 2–3 guests. For a larger gathering or caviar service: 125g serves 4–6 guests comfortably.

What pairs well with caviar?

Classic accompaniments include blinis, lightly toasted brioche, crème fraîche, and hard-boiled egg. Keep garnishes simple — the caviar is the focus. For drinks, Champagne, dry sparkling wine, and ice-cold vodka are the traditional pairings. A crisp Chablis or dry sake also work beautifully.

What should I avoid serving with caviar?

Avoid strongly flavored accompaniments that compete with the caviar — heavily seasoned crackers, aromatic herbs, and citrus can overwhelm the palate. Red wine is generally not recommended as the tannins clash with the mineral notes of the roe.

Where does Atelier Loravia caviar come from?

Our caviar is farmed sustainably in Poland, from some of Europe's most carefully managed sturgeon aquaculture operations. The eggs are cured by Persian artisans using Caspian Sea salt and the traditional malossol technique.

What does 'malossol' mean?

Malossol is a Russian word meaning 'little salt.' It refers to a light curing method that uses minimal salt — just enough to preserve the eggs without masking their natural flavor. It is the gold standard of caviar preparation.

What is the difference between Royal and Imperial grade?

Royal grade features smaller, darker eggs with excellent flavor — the best entry-level option. Imperial grade offers medium to larger pearls with greater visual brilliance and a more complex flavor profile. Special Selection, available exclusively on Almas, designates the largest, brightest eggs harvested at peak maturity.

Is your caviar sustainably sourced?

Yes. All of our sturgeon are farm-raised under European aquaculture standards with full traceability. We do not source wild-caught caviar.

Ordering & Delivery

How does delivery work?

All orders ship via next-day overnight delivery to anywhere in the continental United States. Orders placed before 12:00 PM Eastern Time (9:00 AM Pacific) ship the same day. Orders placed after the cutoff ship the following business day.

Do you deliver on Mondays?

No. We do not dispatch orders on Sundays, so Monday delivery is not available. Orders placed on Sunday will ship Monday for Tuesday delivery.

How much does shipping cost?

Shipping is free on all orders of $300 or more. Orders under $300 incur a flat $39 overnight shipping fee.

What states do you deliver to?

We ship to all 48 contiguous states. We do not currently ship to Hawaii or Alaska.

Can I change or cancel my order after placing it?

Contact us immediately at [email protected] if you need to make a change or cancellation. We process orders quickly, so early contact gives us the best chance to accommodate your request before the order is dispatched.
