Almas means diamond in Russian. This is not a coincidence. The caviar comes from albino beluga sturgeon aged between 60 and 100 years — fish so rare that the albino mutation occurs in approximately one in every six thousand specimens. The pearls are ivory to pale gold, almost translucent, with a texture so delicate it seems to dissolve before you have fully registered it.

The flavor is unlike anything else in our collection — or anywhere else. Sweet butter and toasted nuts, with a finish that lingers with extraordinary length and grace. There is nothing to compare it to. Almas is not simply caviar. It is an event.
